FRITTER & CLAM CAKE MIX



FRITTERS, ANY WAY YOU LIKE THEM
(Not just for clam cakes!)
Fritters are the perfect value added appetizer.
Make them the Rhode Island way as a clam cake (chopped clam fritter), add corn to make the perfect corn fritter, add seafood for the perfect seafood fritter, appetizer or apples to make a savory dessert apple fritter. (see more ideas below)
A tip: our fritters pair well with soups or chowders.
CLAM CAKE INSTRUCTIONS

1 pound Drum Rock Fritter & Clam Cake Mix
-
Add 1 cup chopped clams to the mix
-
1 to 1 1/4 cups cold water
-
Fold until evenly mixed. Do not over mix
-
Use either canned or frozen clams. Frozen clams must be completely thawed.
APPLE FRITTER INSTRUCTIONS
-
1 pound Drum Rock Fritter & Clam Cake Mix
-
Combine 1/2 tsp each ground nutmeg, ground cinnamon, and grated orange zest to the mix
-
Add 2 large peeled & diced apples to the mix with 6 oz apple cider, and 6 oz beer
-
Gently fold until just mixed, let rest and rise for 10 minutes
-
In another bowl, combine 2 cups granulated sugar with 2 tbsp cinnamon for the coating.

Scoop batter with a #30 scoop into 350 degree oil. Fry for 4 minutes, slipping halfway through until crispy and golden
-
Drain for a minute, then immediately toss in cinnamon sugar mix.

Serve warm
